Honey process coffees were developed by Costa Rica farmers when someone invented a demucilage machine affordable to the individual farmer. Suddenly the farmer could decide how much mucilage to leave on the bean, how many times it would be turned as it dried and the finer details that have made Costa Rica a leader in specialty coffee. Jhonathan Comacho's family has been farming in the valley for 2 generations and, while he is a doctor by profession, he has a small farm near the Genesis Micromill which manages the processing and drying of his crop. This is new crop 2020 yellow honey process coffee and we are so excited to offer it to you.
